Sweet Myer Lemon, peach, white flower and beeswax. On the palate, it is medium bodied, bright and clean with an opulent mouth feel, and a clean refreshing, focused finish.
In 2017 we had an opportunity to take on some very exclusive fruit from a vineyard in Santa Maria. I wanted this opportunity to work with this amazing vineyard and Bill, our owner, allowed it with the stipulation that I make it without sulfur. Up until this time I had not made a white wine without preservatives as I was afraid that they would prematurely age. This opportunity was too good to pass over and I took on the challenge. The fruit was so clean when it arrived at the winery that I decided to ferment with wild yeast in order to capture more of the unique flavors of this site. Only four barrels were produced, all French oak, and each was completely unique as the wild strains of yeast were different in each barrel. The results were incredible; a balanced and brilliant wine with subtlety and finesse.
